Green Juice Recipes

Green juice made with fresh, raw food is the easiest way to consume a lot of vegetables at once and get a wider variety in your diet. Juicing, like blending, breaks down the cell walls of raw food and liberates nutrients for easy digestion.

There are so many ways to make greens tasty. You can add apples or grapes to sweeten them, ginger to cut the taste of a really strong green, or different fruits to give you different flavor. The possibilities are endless!

We have over half a dozen recipes for you to try and experiment with! As we continue our adventure with the raw food lifestyle, we'll add more and let you know when we do. We love our green juices and we hope you'll love them too!




Green Lemonade

This recipe comes from Natalia Rose’s, Raw Food Detox Diet book and has been the basis for our green juices.

1 head Romaine lettuce or celery

5-6 stalks Kale (any type)

1-2 apples (sweet)

1 whole lemon (unpeeled)

1-2" gingerroot (peeled)

Process everything through your juicer.




Rick’s Green Meanie

This started out as green lemonade, but when I got carried away with the greens my husband (who had been jokingly calling this his Green Meanie) said it was starting to live up to its new name. So take it easy on the greens to keep it delicious. The pineapple is a new touch which we love!

1 head romaine lettuce

5-6 stalks of celery

1 zucchini

2 Fuji apples

2 inches gingerroot (peeled)

1-2 handfuls spinach

1/4 head of cabbage (nutrients similar to kale but milder in taste)

1 lemon, peel and all

1/2 small pineapple (peeled and cored)

Extra leaves of chard or lettuce or whatever you have

This makes about a quart or four 8-ounce glasses (maybe a little more). As I add more greens, I add more lemons and gingerroot. Juice is always best fresh, but this keeps for a few days as the lemon acts as a preservative. I use jars to store it in the refrigerator. The greens taste stronger on days 2 and 3, but it is still delicious. This is a great cleansing drink and we try to start every day with it.




Current Green Lemonade

My body wasn’t loving the pineapple after awhile so I modified the recipe, eliminated the pineapple, and added a few more things.

3 lemons (leaving most of the peel)

4-6 inches gingerroot (peeled)

6 Fuji apples

2 large cucumbers

1 large zucchini

1 head Romaine lettuce

12 celery stalks

1/2 bunch cilantro

1/2 bunch parsley

1/2 head cabbage

5 leaves of kale, chard or collard greens

This makes almost a gallon of juice, so you will have to mix it in another container. It lasts us for five days.




Kathy’s First Version

This is the version Quila gave me that I used on several occasions for fasting. My current version is below this recipe.

1 pineapple

1 head Romaine lettuce

2 Fuji apples

2 zucchini

1 lemon w/peel

2" raw ginger (peeled)

1 dropper of Stevia

Process everything through your juicer.




Kathy’s Current Version

This is the current version I’m using as I wasn’t enjoying the Romaine and ginger combination. I really like this version!

1 bunch kale leaves

1 bunch celery

2-3 apples (sweet)

3 lemons (I generally leave the peel on, cut off the ends and then quarter)

2" raw ginger (peeled)

1 dropper of Stevia

Process everything but the Stevia through your juice, pour into a pitcher, add the Stevia and enjoy! This makes 1 quart. If you want to double the recipe for two quarts, you can have a cup a day for 5-6 days.




Green Giant Juice

This recipe comes from Raw Food Revolution by the “Mother of Gourmet Raw Vegan Cuisine,” Cherie Sora with Brenda Davis, and Vesanto Melina. It makes about 3 cups and is what Cherie drinks every day.

1 bunch kale (about 8 ounces)

1/2 head romaine lettuce

1 cucumber

1 apple

4 stalks of celery

1 lemon, peeled

Process everything through your juicer




Reboot Juice

This recipe is the one Joe Cross from Fat, Sick and Nearly Dead did for 60 days, under the supervision of health professionals. This makes about a quart and he made it for himself three times a day.

6 kale leaves

1 cucumber

4 celery stalks

2 green apples

1 lemon

1 piece raw ginger (peeled)


This is how I make it taste delicious:


3-4 kale leaves

6 small chard leaves (or other greens, spinach, romaine lettuce)

8 celery stalks

6 fuji apples

1 lemon – leaving half the peel

1 big piece raw ginger- peeled (lots)

This makes about a quart and a half.




What’s Your Favorite Green Juice Recipe?

As you can see, pretty much anything goes when it comes to green juice. Try one, or all of our recipes and then change them up to suit your taste. Kathy changed Natalia’s green lemonade from Romaine lettuce to celery as she didn’t like the combination of Romaine and ginger. She also added more lemons and an additional apple.
